DADA or Defence Against the Dark Arts I think.

It combines both offensive and defensive magic, and it sounds like one of the more interesting classes, where you get to learn about some of the scarier applications of wizarding talent.

Transfiguration or D.A.D.A I think would be the most interesting.  But even potions would be cool
