For me, one of my favorite songs to chill out to after a long day at work is to is a track called 'Don't shoot my girl' by Russian trip-hop band 'Rekevin'.

Rekevin - 'Don't Shoot My Girl'
The song just makes you want to sit back with a cold beer in hand and relax. Not only this but it's a wonderful arrangement that is intricate and beautiful.

The song's production also lends it to being a 'laid-back anthem'. 'Don't shoot my girl' somehow manages to be both spacious and dense at the same time, and this makes it great for easy listening after a hard day in the office, but also interesting enough not to turn it off.
